Proofer
 

Proofer is a special machine that is used to develop a dough that contains yeast. with raises humidity (moisture) so that there is yeast in the dough to work to expand. Actually the bread dough can be developed without the help of proofer, which is the traditional way is to put a wet cloth over the dough to get the appropriate temperature for yeast to work.

But often the end result is less satisfactory because the dough becomes dry and is very ineffective way to production in large quantities. With the discovery of the developer or proofer machine accuracy of the temperature can be controlled and proofing more perfect outcome. Each proofer has a separate system for heating and humidity, so that the dough development process can be maintained.

In principle, a proofer always comes with 2 pieces of the heater air heater which serves to heat the room / chamber and the water heater to produce air humidity. Temperature commonly used is a maximum 36 degrees Celsius with humidity between 70-90%.
